Cauliflower is the best known and most popular cabbage in our kitchen, and is eaten both raw as a snack or prepared.

Cauliflower comes in three variants: one white, one green and one purple version.

The cauliflower is not yet fully developed sterile inflorescence of the plant. The “flower” remains white because the green bracts during growth over the plant tied or bent.

The green version, also called Romanesco cauliflower or tower, consists of more loosely fitting tufts that bright green color. Here is the flower color can not be covered otherwise occur.
There is also a purple variation of the previous but has a purple flower. It is less known.

The leaves of the cauliflower are perfectly edible, like cabbage.

The real season for the white cauliflower is from April to December. However green cauliflower is available from May to December.
The best little cauliflower are the smallest. They have the most delicate taste. The cauliflower should always nice to see white, and should certainly not woolly appearance. And if the outer leaves are bright green and crisp, then you are sure you have a fresh cabbage in your hands.
